Menu Plan for May 9 – 15

Whew!  It’s been awhile!!  I wish I could say that I’ve been menu planning and just not sharing on the blog.  But I just haven’t been planning and I’ll be honest – it hasn’t been working well.  So when I heard the advertisements for E-Mealz* on the Dave Ramsey Show, I thought maybe I’d give it a try and see if it could get me back on track.

I picked out 5 of the 7 dinners listed for the week:

Cheeseburger Sliders
Italian Baked Chicken
Skillet Burritos
Bacon Ranch Toasted Subs
Sausage Roll

The remaining two dinners will be left to chance; either our stand-by grilled cheese/quesadilla night or a night to eat out.

The best part so far I’ve found is that I had many of the ingredients for these meals in my kitchen already. You can’t get much easier or frugal than that!!!

I have lots of posts rolling around in my head that I want to put out soon. First of which is a rundown of the amazing time we had with my mom, Jacqie & Jake in town. Next up will be some of the tools & resources I use to help me with my menu planning. Along those lines, I also have some money-saving resources that I’d like to share…some are fairly well-known, some might not be. Stay tuned for those soon!!

I’m also considering posting more car seat safety info. It is a passion of mine and I feel that education is really the best way to see things change but am unsure how interesting that is to my readers. I’d love to know what you think!

Menu Plan for February 28-March 6

You gotta believe the week isn’t starting off in the most organized fashion when the menu plan post comes at 11:00pm Monday night! I had a plan done yesterday afternoon but had to make adjustments when Brooke wasn’t up to stopping at the grocery store after dinner. Cie la vie with a spirited toddler!

Monday – Spaghetti, peas & garlic bread
TuesdayTaco Pasta from Lynn’s Kitchen Adventures, I made the meat mixture tonight and doubled it and froze half. So now when its time to eat I just need to boil pasta and shred some cheese!
Wednesday – Hot Dogs, I got some leftovers from the company’s Annual Chili Cook-Off on Friday and don’t want them to go to waste
ThursdayBusy Mom’s Chicken Fajitas
Friday – Sunday – Family in town!! Mom, Jacqie & Jake fly in Friday so I have meal ideas but we’ll play it by ear. Ideas include Taco Burgers, Buffalo Chicken Spaghetti (it makes a lot!) and Happy Housewife’s Chicken Pot Pie on the Fly
