We’re back!! After a week of both girls suffering from walking pneumonia and a week off from school, daycare and work, we’ve got new school lunches to show.

This week we took advantage of some leftovers and did something out of the ordinary for me on the day of Brooke’s field trip.

Weekly Meal Plan & Goals – November 2, 2015

If you follow me on Instagram you may have seen a series of pics last Sunday documenting me getting meals prepped for the upcoming week. It was a busy one…we had activities every night from Saturday – Tuesday and all but one involved dressing at least one kid in costume. Even with all that we had going on, due to my planning and prep work ahead of time, we didn’t need to eat out once. That is a huge win in my book!

Even better, I’ve managed to have enough of the prepped food leftover that I could carry over some of the prepped meals into this week’s meal plan. Grocery shopping this weekend was so easy because we pretty much just needed our weekly staples – eggs, bread & produce and that’s it!

So here’s the plan for this week:

Breakfast

Brooke & typically have some form of eggs every morning; scrambled, fried or in a hole

Lunch

Leftover turkey tenderloin
Leftover salmon burgers
Leftover sweet n’ sour chicken
Creamy tomato tortellini soup
Sandwiches

Dinner

Turkey Tenderloin, mashed potatoes, California medley vegetables
Cheeseburger Pie, frozen corn
Chili & fixins, cornbread
Leftovers or Mexican Pizzas
Grilled Cheese night
Pizza Night

Next up are my goals for the week. Eventually I’d like to have them categorized or organized in some fashion. For today, I brain dumped a few things I’d like to get started with RIGHT NOW. So here goes:

  • Mail a “Thinking of You” note to a friend
  • Bible study 5 of 7 mornings
  • Lunches packed at night
  • 2 blog posts & 1 video posted
  • Schedule social media posts the night before
  • Walk at least 20 minutes 3 of 5 workdays and at least 1 weekend day
  • One Fit2be session each day (at least 10 minutes)

I’ll check in next week and report on how I do accomplishing these goals and share any new goals I’m going to set!!

3-Cheese Macaroni & Cheese

This recipe is a family favorite at our house! I have posted a macaroni & cheese recipe here before but wasn’t completely satisfied with it. It’s good but was just missing something.

I think I found it here! More cheese of course!!! The 3 cheeses add different layers of flavor and combine to make a to-die-for creamy, cheese sauce.

This could easily be a weeknight meal, especially if you’ve already shredded your cheese ahead of time.

3-Cheese Macaroni & Cheese

Ingredients
  

  • 1 pound elbow macaroni or shells cooked according to package
  • 1 stick butter
  • 1/2 cup flour
  • 4 cups milk
  • 1 tsp salt or to taste
  • 1/2 tsp pepper or to taste
  • 1/4 tsp garlic powder
  • 1/4 tsp ground mustard
  • 12 ounces extra-sharp cheddar cheese shredded (recommend shredding yourself!)
  • 1 cup Parmesan cheese finely grated
  • 4 ounces cream cheese

Instructions
 

  • Cook pasta according to package, drain and set aside.
  • To the same pot, add the butter over medium heat to melt.
  • Add the flour and whisk constantly until the mixture turns light brown and has bubble for about 2 minutes. Cook long enough to cook off the raw flour taste but no so long it gets overly browned.
  • Slowly add the milk, whisking constantly, making sure to smooth out any possible clumps that formed.
  • Add the salt, pepper, garlic powder, optional dry mustard and whisk to incorporate.
  • Add the cheddar, Parmesan & cream cheeses and stir until melted and smooth.
  • Add the pasta and stir evenly to coat.
  • Serve immediately. If desired, can be kept in fridge for up to 5 days or freezer for 4 months.
