Menu Plan Monday – Feb 13 – 19

Now that I’ve added taking going back to school to everything else we have going on, it has become even more essential to have a menu plan and have it ready so that we can do our grocery shopping after church. Otherwise, all hell will break loose come Monday night.

The trick has been having time to blog it. I’m taking a break from said schoolwork to watch Adele on the Grammy’s and type up my menu plan for this week.

Monday – Crockpot Chicken & Dumplings
Tuesday – Spinach Baked Ziti
Wednesday – Chili
Thursday – Taco Pie
Friday – Easy Ranch Chicken

By the time the weekend comes, I’ll probably not have made one of the meals above and can use it or we’ll have enough leftovers that we can do that.

Easy Chili Recipe

I love this chili recipe. It’s thrown together quick enough that I can easily make it on busy weeknight but it also has elements that can be prepared ahead to make it even quicker. It also freezes well!!

Easy Chili Recipe

Ingredients
  

  • 1 lb ground beef or ground turkey
  • 1 onion chopped
  • 1 14.5 oz can red kidney beans undrained
  • 1 14.5 oz can black beans undrained
  • 1 14.5 oz can diced tomatoes undrained
  • 1 8 oz can tomato sauce
  • 2 Tbsp chili powder
  • 2 tsp ground cumin
  • 1.5 tsp garlic salt
  • 0.5 tsp oregano
  • shredded cheese if desired
  • sour cream if desired
  • green onions if desired

Instructions
 

  • Brown ground beef (or turkey) and onion in large skillet on medium-high heat for 5 minutes; drain.
  • Add remaining ingredients. Bring to boil. Cover and simmer 20 minutes, stirring occasionally.
  • Top with shredded cheese, sour cream or green onion, if desired.

Notes

To kick up the heat, use tomatoes with green chiles, or "chili ready" diced tomatoes.

I’ve hesitated to share recipes here because I don’t actually create them but will tweak them here and there.  But cooking is something I really enjoy and I think having an arsenal of quick, mostly healthy, easy recipes is a great asset to busy moms.

To that end, I’ve decided to start sharing some favorites here and there. My first will be a chili recipe that I’ve been tweaking for years and it’s a staple for us.

Brooke and I spend a lot of time together in the kitchen so I will also highlight ways to get kids in the kitchen with you!
