Menu Plan Monday

I was a busy momma today!! Not only did I get the menu plan done, I cooked the chicken for two meals in the crockpot and made two batches of the meatloaf mixture – one is ready in the fridge for dinner tomorrow. On top of that I browned up two pounds of ground beef for the freezer. The only thing I wish I would have accomplished is the grocery shopping but I can do that tomorrow after work so no big deal!  I also wanted to make the enchilada sauce for our Bean and Cheese Enchiladas but that should be easy enough to do some night this week.

While I was getting the recipes for the week into Ziplist to generate my grocery list, I came up with the idea to pin all the recipes on Pinterest since they came from all different sites. Now I don’t need to remember on which site I found a recipe, I’ll just go to my “On the Menu This Week” board.

On the Menu This Week:
Mini Meatloaves, Mashed Potatoes, Veggies
Buffalo Chicken Wraps, Chips, Baby Carrots
Shredded Thai Chicken Salad
Bean N Cheese Enchiladas
Down Home Mac N Cheese

Menu Plan Monday, August 15

I’m on the ball this week! Not only do I have my menu plan done for the week, I have the blog post up too!!! In all honesty, the meal plan wasn’t too hard because I used all of my e-mealz plan but one day. Plus, I stole one of the dinners for tonight (grilled garlic & herb chicken).

Dinners:
Parmesan Crusted Tilapia
Slow-Cooker Stroganoff
Mexican Casserole
Cheeseburger Sliders
Pork Chops
Sunday – Cookout at Keith’s boss’ house!

Breakfasts:
Overnight Oats
Cereal/Yogurt Mix
Oatmeal

Lunches:
Leftovers
Sandwiches
Salad Bar in a Box

Menu Plan for June 6-12

I <3 Emealz

As much as I’d love to think I can do it all myself, there’s just not enough hours in the day. So after hearing about e-mealz and taking a peek at some sample menus, I decided to give it a try and I’m so glad I did. For basically $1.25 per week, I get 7 days of dinners & sides planned with the grocery list and recipes/instructions.

To have someone take one thing off my plate by just telling me what to put on my plate is well worth that $1.25/week!!

So for this week we’ve got:

Layered Supper Salad
Beef Tacos
Balsamic Pork Chops (stepping outside the beef and chicken box!)
Beef Stroganoff with Noodles
Coconut Shrimp Bake (also outside my comfort zone)
Cream Cheese Chicken Pockets

I’m still keeping breakfasts & lunches super simple with yogurt & cereal or overnight oats in the morning and PB&J or turkey/chicken sandwiches for lunch.
