I believe one of the keys to keeping dinner time as sane as possible is planning ahead, especially for moms who work outside the home. So when I’m planning my meals, I also like to keep in mind what prep work I can do the weekend or night before. I’ll brown and sometimes seasons ground beef or turkey in big batches and freeze them in 1 pound increments, chop up veggies, basically anything I can have done ahead of time.
Taco Night is a perfect example of a great, easy to prep ahead, weeknight meal. The meat can be browned and seasoned, toppings chopped, cheese shredded and when dinner time comes all you have to do is heat your meat, torillas or taco shells and assemble!! Old El Paso makes it even easier with their lineup of seasonings, meal kits, sides and sauces.
We finally had Keith home for dinner one night so we had our own Family Taco Night! We had Chicken Ranch Tacos and everyone pitched in! I set Keith and Brooke to work tearing lettuce.
While they did that, I threw together the chicken for the tacos. It was so easy. You could do this with a rotisserie chicken from the grocery store. For this night, I used chicken that I’d cooked in the slow cooker. There were only 3 ingredients to throw together: chicken, ranch dressing and Old El Paso Taco Seasoning. Easy Peasy!!
Old El Paso had provided me with some cool dishes so we were able to make everything look more festive!!

My favorite go-to meal is Chicken Broccoli Rice Casserole. It’s easy peasy.
1 can chicken
1 can cheddar cheese soup
1 can cream of chicken soup
Frozen broccoli (I never measure this… just use as much as you want)
2 boil-in-bags of rice (or 2 cups normal rice)
Shredded cheese
Preheat oven to 350. Thaw broccoli. Drain chicken. Throw all ingredients except the shredded cheese into a 13×9 casserole dish. Mix well. Top with cheese. Bake for about 20 mins or until cheese is melted.

Everyone in our house loves this quick meal (weekend prep and freezing required), Martha Stewart’s red sauce with couscous, slivered almonds and golden raisins. YUM!!! Dinner is always ready in under 10 minutes! WOOHOO!

One of our favorite go-to quick meals is pasta with tomato cream sauce. I make the pasta sauce ahead of time so that when it’s time to make dinner, all I need to do is boil some pasta and heat up the homemade sauce. Pop some bread in the oven and mix up a bagged salad and you’re good to go!
We love to do brinner- breakfast for dinner! Simple, easy, filling. Kiddos love it! We’re so trying the chicken tacos tomorrow, though!!!
No fair – Biz stole my answer!! We love to do brinner as well and keep it super simple – pancakes, heat and serve bacon, and scrambled eggs, along with some fruit. We also love tacos over here, though we’ve yet to try chicken ones. 🙂
Cheesy chicken skillet… frozen california veggies, shells and cheese and boneless skinless chicken breast in a skillet. If Stig will eat it… it’s a winner!!
